Cucumber/Avocado/ Yogurt Soup
1 14 oz. can of low fat, low sodium chicken broth
1/2 English cucumber, peeled and sliced thick
I ripe avocado
about 1/2 cup fat free Greek yogurt, I don't measure
2 T fresh dill, chopped
Put all in blender and puree, then chill to serve cold
Garnish with a few squares of seeded tomato and a sprig of dill

That looks so refreshing and easy! My cucumbers in the garden are almost ready.
A keeper recipe, for sure...
I filed it with my Watercress Soup one. In this heat, a cold soup is perfect.
